Avocado & Lime Soup X

2 ripe avocados
1 small mild onion, chopped 1 garlic clove, crushed
2 Tbs chopped cilantro
2 Tbs chopped fresh mint
2 Tbs lime juice
3 cups vegetable stock
1 Tbs rice vinegar
1 Tbs light soy sauce salt and pepper garnish
2 Tbs sour cream
1 Tbs finely chopped cilantro
2 Tbs lime juice finely shredded lime rind

1Halve the avocados and remove the pit. Scoop out the flesh and place in a blender or food processor with the onion, garlic, cilantro, mint, lime juice, and about half of the stock. Process unil completely smooth. 2Add the remaining stock, the rice vinegar,and soy sauce and process again to
Mix well. Transfer to a bowl, then taste and season, if necessary, with salt and pepper or with extra lime juice. Cover and leave to chill until required. 3To make the lime and cilantro cream garnish,
Mix the sour cream, cilantro,and lime juice together in a bowl. Ladle the soup into chilled bowls. Spoon the lime and cilantro cream into them and sprinkle with lime rind.

Cooking Tips The surface of the soup may darken slightly if the soup is stored for longer than about 1 hour, but don't worry--just give it a quick stir before serving. If you plan to keep soup for several hours, stretch a a piece of plastic wrap over the surface to sel it from the air.
